Carnival Squash recipe!

We’ll be posting recipes on the blog from time to time!  This one works with multiple types of squash but we chose carnival because we used it in our boxes last week.


First, an easy way to soften any squash so it’s easier to slice: cut some small slits in the squash and put it in the microwave for 3-5 minutes. This will make it softer.


Get your ingredients ready! butter, salt, pepper & brown sugar.

Preheat the oven to 400.

Slice the squash in half and scoop the seeds out (you can save them and roast them later if you’d like), then quarter it.  Place the pieces skin side down on the baking sheet.

Then place a square of butter and a teaspoon of brown sugar on each piece of squash  (or whisk brown sugar and butter together and then place on squash) and sprinkle with salt and pepper.  Cook around 30-40 min or until tender.  You can also flip halfway through to get the meat more browned but it’s not necessary.

 

You can eat the skin on carnival squash.
